Our December Kitchen of the Month was Karen, from Karen’s Kitchen Tales.  Karen requested us to make
Ekmak, a boat-shaped Syrian pastry full of sweetened ricotta cheese, topped with jam
and fruit, and drizzled with honey.  It
is paying homage to khachapuri, which is a savory pastry.  This explicit recipe will be discovered within the
July/August (2021) concern of Bake from Scratch.

My expertise making this was straight-forward and
uneventful for a change.  The dough was
pretty to work with and shaping was straightforward. 
I used Bonne Maman Cherry Preserves for the topping.
